The Southbend HDG-72-M griddle uses natural gas and electronic spark ignition to cook food. If the pilot will not ignite, this unit has a flame safety device that prevents it from turning on. Because it produces grease-laden vapors, this griddle must be used under a grease hood and away from combustible surfaces—12 inches on the sides and 8 inches at the rear. To reduce the risk of overheating, the unit is lifted off the countertop with 4-inch-tall, adjustable legs.
